I have notice when i go into buildings and people use for example the Birthday cake, they hit 110, while mines only hits 100?!?!? how come its like that, the same thing with the Safe Drope Gag, and the Whole Cream Pie. Do i have to keep training them until it hits that higher?

I don't do the math!
But...
Is you cake maxed to 1000 and you have lvl 7 gags?
Or the cake could be organic? There is a bonus there for that.
I'm sure someone who does the math will come along and give you the correct answer.

Silly is on the right track. A planted (organic) Wedding Cakes does 110.
One you complete a gag level (like safe or cream pie) then that level is at it's max. When you plant gags they will get a bonus.

Yep, it's math time. An orgainc gag does 110% of the damage that the gag would normally do. That sounds complicated, but really isn't. Just take the first number (or 2 if it does 3 digit damage) and add that to the gag's damage. For example, a whole cream pie usually does 40, so if it was orgainc take the 4 (first digit of 40) and add it to 40 (the normal damage). Doing that, you get 44, which is how much an organic cream pie does. An example of a triple digit would be a wedding cake. It normally does 120 damage, so take the first two digits (12) and add it to 120, and you get that an orgainc wedding does 132 damage.

I'm thinking you mean TNT? Max organic train does 214 I believe - I just recall it kills the 12s. I'll have to check my toon that has organic train again for the exact number.
