A pumpkin dessert that if I don't make....well see Broccoli/cheese. Graham crust/cream cheese layer/pumpkin layer and then whipped cream. About 6 cups of sugar and at least 1/2 pound of butter. It's a diet recipe

Plus whatever I decided to bake that year. Cookies/candy/whatever. Not much lately but I think the kid and I are going to dig in and make a few things this year.

Use to throw a ham in there but the above 2 things over ruled it.

I loooove to cook but not the everyday stuff so much. I guess I mostly like to entertain cook?

We save the Turkey for Thanksgiving and the Ham for Easter.
On Christmas always filet mignon and baked stuff shrimp with various side dishes...
MST...Lasagna is not odd! We have it as a side dish too!

Hmmm - so far, I'm picking lil duck's house. What time is dinner?? MST's lasagne would be second choice.
We seem to always have ham. I'm a holiday freak in that I don't care for turkey, won't eat dressing, gravy, sweet potatoes, etc. When I was single and living away from my family I went to Steak and Ale and had Surf and Turf - yummy.

But, I guess I have to go with being with the family is more important than what we eat (and I can go out to dinner the next night and get what I want!)

I suppose we'll have the hickory-smoked ham this year with a salt, turbinado sugar, and maybe some paprika mixed up for a rub/glaze. We'll side some mashed potatoes, green bean casserole, cornbread dressing, and (if I can find some), purple hull peas next to it. There'll be spearmint tea and cokes and such but no egg nog, and we'll have a Karo Nut Pie, maybe a French coconut pie. That's the only coconut my wife likes, and we have fun making it. And there will be an assortment of cookies. The best thing served up though, is the relaxing and enjoying the food and the season after all the fixing is done.

Well, I mentioned in another thread that we buffet style at Christmas, due to the size of the immediate family. (There are about 35-45, depending on which kids have a current "love" to bring with or not). The food goes from about noon to 9 or 10pm. No, not JUST eating, lol... Just there for the taking. We have the initial feeding frenzy about 1:00 and then I just keep bringing out more and new things through the day/evening. In between, we are visiting, singing, opening gifts, usually put in a movie for the kids at some point. I have not yet to plan this year's buffet, but I know some are just a gimmee and I'll be making them. Lots of "snacky" sort of stuff.

*Always have Ham. Served hot at first with a delish glaze made of brown sugar, pineapple juice, o.j. concentrate, mustard and ground clove. Years ago, I took the time to put the whole clove in, painstakingly one at a time, in a decorative pattern, and lattice cutting it before "presenting" it at the table, but soon realized that for 30 seconds of "Oooh, aaah," and then having to remove them and everybody waiting for it to be sliced, was just NOT worth it. Towards evening, I put the ham back out, chilled and sliced with dollar buns and toppings for small sandwiches.

*Bite-sized BBQ Meatballs. (with a mass amount of toothpicks for serving so they are grabbed on the fly-by usually).

*Lefsa rolled with egg salad.

*Pickled herring.

*Scallops wrapped in bacon and broiled.

*Dips... Always have dips w/about 8 kinds of crackers and chips or veggies... Ham salad, spinach dip, chili/cheese dip w/tortilla chips, layered taco salad dip, dill dip w/fresh veggies, (carrots, broccoli, cauliflower, celery, cherry tomatoes, cucumbers), fresh salsa, onion dip, crab salad.

*Deviled eggs.

*Chow Mein hotdish.

*Shrimp w/cocktail sauce.

*Salami, pepperoni, canadian bacon, cheese tray w/crackers.

*Fruit tray, (strawberries, blueberries, pineapple, mandarin oranges, grapes, cantelope, apple slices tossed in citrus so they don't brown, raspberries and blackberries), w/a cream cheese fruit dip.

*Pot roast served almost like a stew... the potroast is fall apart tender, in a slow cooker, with baby carrots, celery, diced potatoes, pearl onions and gravy.

*Au Gratin potatoes.

*Garlic cheese biscuits.

*Calico Beans made with bacon and hamburger.

*A cold pasta salad.

*Chicken and wild rice hotdish.

*Estonian apple-struessel coffee cake, pumpkin bars, spritz cookies, bon-bons, almond bark, chocolate nut-clusters, lemon bars, assorted Christmas cookies.

Now... People... I am intrigued... What is the difference between "dressing" and "stuffing"? We call it both here, but it is actually the same thing... I never knew that were 2 names for pecan pie either. I love it.

This is how we do stuffing and dressing at our gatherings:
Stuffing--cooks inside the turkey bird while the bird is cooking.
Dressing---made outside the bird, usually like a casserole.

Hmmm I do both inside and out but always thought the names were interchangeable (did I speel that right)? Then I just mix the two together since the inside stuff is never enough.
